原種 元種の作り方

酵母做好後,接下來可加入麵粉製作成原種。

預備一個800~1000ml的玻璃瓶子,用沸水消毒,冷卻後才可使用。

做法:

第1天: 將60g全麥麵粉和50g酵母液放入瓶子內拌勻,蓋上蓋子,放在室內較暖的地方。膨脹至2倍大之後(約4~5小時),放入雪櫃保存一晚。[夏天約4~5小時,冬天約1日]

第2天: 加入75g高筋麵粉和40g水拌勻,放在室內較暖的地方,膨脹至1.5倍大之後,放入雪櫃保存一晚。[夏天約2小時,冬天約6~7小時]。

第3天: 加入25g高筋麵粉和10g水拌勻,放在室內較暖的地方,膨脹至1.5倍大之後,放入雪櫃保存一晚。[夏天約1小時,冬天約2~3小時]。

第4天: 重復第3天的步驟。

 

原種需放入雪櫃保存,每次使用後要續養,份量和第3天的一様。

原種翌日可立即使用。

原種可保存2星期,之後活力可能會減退。看看瓶子底部,如有很多氣泡,原種仍然充滿活力。

食譜可加入原種代替酵母,份量為100g高筋麵粉 : 40g原種。
