Baked Honey Mustard Salmon and Veggies

A one pan healthy dinner with fresh veggies and tender salmon which is perfect for a busy weekday evening.

Ingredients

  • 2 salmon fillets
  • broccoli florets, bite size
  • red onion, diced into chunks
  • tomato, cut into half
  • carrots, sliced
  • thyme
  • olive oil
  • garlic cloves, minced
  • 2 teaspoon lemon juice
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • fresh lemon slices

Instructions

  1. Preheat oven to 190C. Line a baking dish with foil. Place the broccoli and carrots in the dish, drizzle with 4 teaspoon of olive oil and season with salt and pepper. Baked for 8-10 minutes.
  2. Meanwhile, stir together mustard, honey, 1 teaspoon olive oil, minced garlic and lemon juice, set aside.
  3. Remove the baking dish from oven. Place the salmon fillet and brush both sides with the mustard mixture, season with a fair amount of salt and pepper. Place red onion and tomatoes and drizzle with 1 teaspoon olive oil, thyme and season with salt and pepper.
  4. Return to oven and bake until salmon has cooked through and veggies have softened, about 10 minutes longer. Serve immediately with lemon slices.
