Orange Peel Cream Cheese Bun 橙皮忌廉芝士包

忌廉芝士配橙皮原來很清新。剪深一點焗好時剛好可以看得到芝士。

麵糰材料  8個

  • 200g                 高筋麵粉
  • 1-1/3茶匙         速發酵母
  • 25g                   砂糖
  • 半茶匙             鹽
  • 40g                   無鹽牛油 (回溫)
  • 1個                  蛋黃
  • 120ml               牛奶(加熱至35C)

 

  • 50g       橙皮乾
  • 160g     忌廉芝士 (回室溫,分成8份)

 

烤焗用

 

  • 適量     砂糖
  • 適量     蛋液

 

做法

 

  1. 將麵糰的材料拌勻,放在枱上搓揉至光滑。將麵糰推開,包入橙皮乾,搓勻,收口。
  2. 滾圓, 放入攪拌盤內,收口向下,蓋上保鮮紙放入發酵箱用35°C發酵 40分鐘。
  3. 發酵完成後,取出排氣。
  4. 將麵糰分成8份,滾圓,放置20分鐘鬆弛。
  5. 將麵糰反轉, 輕輕壓扁排出多餘空氣,包入忌廉芝士,收口,搓圓,放在焗盤上,蓋上保鮮紙,用35C發酵15分鐘,取出,放室溫10分鐘。
  6. 第二次發酵完成後,用剪刀在麵糰上剪出十字,灑上砂糖,掃蛋。
  7. 預熱焗爐至200°C,焗12分鐘。

    Apart from cream creese, do you also put the orange peel into the dough after the first fermentation?

      Hi Maggie,

      Thanks for letting me know. You need to mix the orange peel with the dough, then begin first fermentation. Sorry that I have left out the important step and I am going to correct it now.
