Roasted eggplant with rosemary

Very simple roasted eggplant to serve with your main course. Other fresh herbs such as sage and basil can be added.


1 eggplant
salt and ground black pepper
chopped fresh rosemary
olive oil


  1. Slice eggplant into fan shape. Place on a baking tray. Brush with olive and bake at 200C for 15 minutes.
  2. Remove from oven and brush with oil. Sprinkle with rosemary, salt & pepper. Bake for another 10 minutes or until tender and edges slightly crispy.
