Tomatoes and eggs just go together well. – tomato and egg stir fry, tomato egg drop soup. This is just a simple yet healthy and delicious soup for dinner.
Ingredients for 2 servings
1 ripe tomato (diced)
1 egg (beaten)
400ml water chicken stock
1 teaspoon oyster sauce
½ teaspoon sugar
salt & pepper, to taste
dash of vinegar (optional)
1 teaspoon constarch
2 teaspoons water
- Bring the chicken stock to a simmer.
- Add the oyster sauce, sugar and tomato to the stock and simmer for about 5-6 minutes until the tomatoes start to soften. Add the starch water and mix.
- Pour in the egg mixture slowly, stir and pull the egg into strands. Turn off the heat.
- Add a drop of vinegar and salt & pepper to taste.
