Simple stir fry dish for a light meal.
2 Japanese green pepper
1 tablespoon cooking wine
1 tablespoon mirin
2 teaspoons soy sauce
1 teaspoon sugar
- Mix seasonings in a bowl.
- Cut the eggplant and green pepper into small pieces. Add oil to a frying pan on medium heat. Fry the eggplant until tender and browned.
- Add the pepper and fry for a few minutes. Add the sauce and stir evenly. Serve warm with cooked rice.
