Oven poached salmon with lemon and dill
This is a quick and easy recipe to cook salmon. Although the fish is baked in the oven, it is actually poached in wine. After 20 minutes, the salmon is perfectly cooked. Tender and delicious.
- 2 salmon fillet
- lemon slices
- fresh dill
- 100ml white wine (or fish stock, chicken stock)
- salt & pepper
- Arrange lemon slices and dill on the bottom of a baking dish. Place the salmon skin side down onto the lemon and herbs. Pour the wine or stock into the dish. Cover with aluminum foil.
- Place the salmon in the oven at 180C and bake until the fish is cooked through, (tender and slightly pink in the center) around 15-20 minutes, depending on the thickness of the fillets.
- Serve and top with more fresh dill on top.
