Pear Compote with jelly 法式燉梨果凍

  • 3-4pcs pears  梨
  • 300g sugar 砂糖
  • 1L water 水
  • half lemon 檸檬
  • 5-6pcs gelatin sheet 明膠片
  • lemon zest 檸檬屑
  • fresh mint 薄荷葉


  1. Peel the pears.
  2. Add water, sugar (300g) and half lemon in a pan and boil.  When the syrup is boiling, add the pears.
  3. Simmer on low heat until the pears become soft.  Test the softness of the pears by fork.  Don’t overcook them.
  4. Remove the pears and lemon from the syrup, discard the lemon.  Refridgerate the pears.
  5. Place the gelatin sheets in cold water to soften.  
  6. Warm the syrup to around 60C, then add the gelatin.  Let cool and refridgerate until serving.
  7. To serve, place the pears and jelly on the plate, decorate with mint and sprinkle with lemon zest.


  1. 梨去皮。
  2. 將水、砂糖和半個檸檬放入鍋中煮沸。
  3. 糖漿沸騰後,加入梨,重新煮沸,轉小火燉至梨變軟。
  4. 用叉測試梨的柔軟度,不要煮過頭。
  5. 從糖漿中取出梨和檸檬,丟棄檸檬並將梨放在冰箱中。
  6. 將明膠片放入冷水中軟化。 將糖漿加熱至 60 攝氏度左右,然後加入明膠並冷卻。 將液體放入冰箱中製成果凍。
  7. 盛出梨子和果凍,用薄荷葉裝飾,撒上檸檬屑。
